Caper Buds and flower opening

Researchers from Italy have found that even the smallest amounts of these green buds typically used in Mediterranean dishes have enough antioxidant flavonoids (principally Rutin) and other phytochemicals to provide health benefits.

Capers help to prevent the oxidation of fat that occurs during cooking and digestion, especially of meats. They also found that components in capers help to regenerate antioxidant vitamin E, making more of it available for use in the body. Both of these things may help vascular health and reduce the risk for heart disease.


Capers also contain isothiocyanates, the same anti-cancer components found in cruciferous vegetables, including broccoli sprouts. Isothiocyanates are capable of interrupting several steps in cancer initiation, and can provide DNA protection.

At the Australian Caper Company we focus on preserving the essential oils and anti-oxidants from the time the caper is picked till it is delivered to you the customer.   Our capers are:

  • harvested, cleaned and in the processing facility within the same day.
  • processed in special vessels to seal in the essential volatile oils.
  • Use only sea salt to draw the bitter acid out of the caper and are brined in their own juices, then packed in sea salt or olive oil.
 

Most imported capers are processed in a weak brine solution which dilutes the essential oils and anti oxidants. Further dilution takes place by being packed in a cheap vinegar and brine solution or the capers are drained and packed in salt, giving a mushy type bud. 

 

You will notice that not all capers and caperberries sold have the tell tale white marks on buds and berries.
